In September 2017, Caroline Cray had her first allergic reaction to ice cream, leading to anaphylactic shock. Soon after, she experienced similar reactions to bread, pizza, rice, and beans, spending 12 days in an intensive care unit. Initially, doctors hoped the reactions would subside, but they persisted. After nearly a year of tests, she was diagnosed with mast cell activation syndrome (MCAS) in May 2018. Today, Caroline can only eat two things - oatmeal and a specific brand of hypoallergenic infant formula. She takes a host of medications daily, weekly, and semi-monthly to manage her condition.
